  • 2 medium beets (about 250g), peeled and diced
  • 2 medium carrots (about 200g), peeled and sliced
  • 1 cup burrata cheese (about 150g)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and peel the beets and carrots, cutting them into even pieces.
  2. Toss the diced beets and sliced carrots in a large bowl with olive oil, salt, and pepper until coated.
  3. Spread the vegetables on a baking sheet lined with parchment paper. Roast for about 30-35 minutes until tender and slightly caramelized, stirring halfway through.
