  • 4 large sweet onions (e.g., Vidalia), sliced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 tsp fresh thyme leaves
  • 8 oz sliced Gruyère cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the chuck roast with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and sear the roast for 4-5 minutes on each side until browned. Remove from pot.
  3. In the same pot, add sliced onions and cook over medium heat for 15-20 minutes until caramelized. Scrape up any browned bits for added flavor.
  4. Pour in red wine, simmer for 5 minutes, then stir in beef broth and thyme. Return the roast to the pot.
  5. Cover with a lid and transfer to the oven. Cook for 3-4 hours until fork-tender.
  6. Remove from oven, top with Gruyère cheese, cover until melted (about 10 minutes), then serve.
