  • 34 boneless, skinless chicken breasts
  • 2 tbsp taco seasoning
  • 8 corn or flour tortillas
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced jalapeños
  • 1/2 cup full-fat sour cream

Instructions

  1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Toss the chicken breasts with taco seasoning until fully coated.
  3. Place the seasoned chicken in the baking dish and bake for 25-30 minutes or until fully cooked, reaching an internal temperature of 165°F.
  4. Remove from oven, let cool slightly, then shred using two forks.
  5. Lay out tortillas on a clean surface. Spoon generous amounts of shredded chicken onto each tortilla and sprinkle with shredded cheese.
  6. Return assembled tacos to the oven for an additional 10 minutes to achieve crispiness and melt the cheese.
  7. Transfer tacos to plates and drizzle with sour cream before serving.
