  • 24 lamb shanks
  • 2 tbsp olive oil
  • 1 large onion, chopped finely
  • 4 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 cups beef broth
  • A few sprigs of fresh rosemary

Instructions

  1. Preheat your oven to 325°F (160°C). In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Season lamb shanks with salt and pepper. Brown each side for about five minutes until caramelized.
  2. Remove the browned shanks and set aside. In the same pot, add chopped onion, garlic, and carrots. Sauté until softened and fragrant, about five minutes.
  3. Return the lamb shanks to the pot and add two cups of beef broth along with fresh rosemary sprigs. Bring to a gentle simmer before covering with a lid.
  4. Transfer the covered pot to the preheated oven. Roast slowly for about two hours until the meat is fork-tender and nearly falling off the bone.
  5. Carefully remove lamb shanks from the oven. Serve on plates with sauce drizzled on top. Pair with mashed potatoes or crusty bread to soak up every drop.
