3–4 boneless, skinless chicken breasts
2 tbsp Cajun seasoning
1 cup flour
2 large eggs, beaten
1 cup panko breadcrumbs
1 cup mayonnaise
4 cloves fresh garlic, minced
2 tbsp freshly squeezed lemon juice
Salt to taste
Instructions
Preheat your oven to 400°F (200°C). Season chicken breasts generously with Cajun seasoning on both sides.
Set up a breading station: one plate with flour, one with beaten eggs, and one with panko breadcrumbs mixed with extra Cajun seasoning.
Dredge each chicken breast in flour, dip into eggs, and coat thoroughly with panko breadcrumbs.
Place breaded chicken on a greased baking sheet and bake for about 25-30 minutes until golden brown and cooked through (internal temp should reach 165°F or 75°C).
In a bowl, combine mayonnaise, minced garlic, lemon juice, and a pinch of salt. Mix well until smooth and creamy.
Toast sandwich buns and spread generous amounts of garlic aioli on both sides.
Layer crispy chicken breasts and any desired toppings such as lettuce or tomato.
