Ingredients
Scale
1 lb beef sirloin, thinly sliced
8 oz fresh cremini or button mushrooms, sliced thick
1 cup sour cream
1 medium yellow onion, finely chopped
3 cloves garlic, minced
2 cups low-sodium beef broth
2 tbsp all-purpose flour
8 oz egg noodles (or rice)
Instructions
Gather all ingredients. Chop onions and garlic finely, slice mushrooms thickly, and cut beef sirloin into thin strips against the grain.
In a large skillet over medium-high heat, add oil and brown the beef strips in batches. Avoid overcrowding the pan to ensure proper searing. Transfer browned beef to a plate.
In the same skillet, add more oil if needed. Sauté onions until translucent, then add mushrooms and cook until golden brown.
Sprinkle flour over the mushroom mixture and stir well to combine. Gradually whisk in beef broth while scraping up any fond from the bottom of the pan. Let it simmer until slightly thickened.
Reduce heat to low and mix in sour cream until fully incorporated. Add back cooked beef along with any juices from the plate. Season with salt and pepper to taste.
Cook egg noodles according to package instructions while finishing off the stroganoff. Serve generous portions over noodles or alongside rice. Garnish with fresh parsley for an appealing presentation.
