  • 1/4 cup freshly squeezed lime juice
  • 4 garlic cloves, minced
  • 1/2 cup low-sodium soy sauce
  • 1 red bell pepper, sliced thinly
  • 3 green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 cups cooked jasmine rice (or quinoa)
  • 2 tbsp olive oil

Instructions

  1. Prepare the Marinade: In a large bowl, mix coconut milk, lime juice, minced garlic, and soy sauce until well combined.
  2. Marinate the Chicken: Add chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes.
  3. Cook the Chicken: Preheat grill or skillet over medium heat. Cook marinated chicken for about 6-7 minutes per side until the internal temperature reaches at least 165°F (74°C).
  4. Sauté Vegetables: While the chicken cooks, sauté sliced red bell pepper and green onions in olive oil until tender.
  5. Assemble the Bowl: Slice cooked chicken into strips and layer on bowls of rice with sautéed vegetables. Garnish with chopped cilantro and additional coconut sauce if desired.
