  • 1 package (about 14 oz) vegan puff pastry, thawed
  • 2 cups cremini mushrooms, diced
  • 1 cup shiitake mushrooms, diced
  • 2 cups fresh spinach
  • 1 cup walnuts, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp dried thyme
  • 2 tbsp soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large skillet over medium heat, add a drizzle of olive oil.
  3. Sauté the onions and garlic until fragrant.
  4. Add the diced cremini and shiitake mushrooms; cook until they release moisture.
  5. Stir in fresh spinach until wilted. Season with soy sauce, thyme, salt, and pepper.
  6. Once cool enough to handle, mix in chopped walnuts.
  7. Roll out the puff pastry on a floured surface into a rectangle.
  8. Place the vegetable filling down the center of the pastry.
  9. Fold over the pastry sides like tucking in a blanket; pinch edges to seal.
  10. Brush the top with olive oil or plant-based milk for a golden finish.
  11. Bake for about 25-30 minutes until crispy and golden brown.
