  • 2 cups sliced mushrooms (cremini or button)
  • 1 medium onion (finely chopped)
  • 2 stalks celery (diced)
  • 3 cups vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the wild rice under cold water. In a medium saucepan, combine the rice and vegetable broth. Bring to a boil over medium heat, then reduce to low, cover, and simmer for about 45 minutes until tender.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and diced celery; sauté until softened (about 5 minutes). Add sliced mushrooms and cook until golden brown.
  3. Stir in dried thyme, salt, and pepper into the mushroom mixture. Let flavors meld for about 2 minutes.
  4. Once the wild rice is cooked, drain any excess liquid if necessary. Add the rice to the mushroom mixture and stir gently until combined.
  5. Preheat your oven to 350°F (175°C). Transfer the mixture into a greased baking dish and spread evenly. Cover with foil and bake for about 20 minutes. Remove foil during the last five minutes for a crispy top.
