1 cup bell peppers (diced, mixed colors)

Instructions
Chop the bell peppers and onion into bite-sized pieces. If using fresh cauliflower rice, grate it or pulse in a food processor until it resembles grains.
In a large skillet over medium heat, drizzle olive oil and add the ground turkey or chicken. Cook until browned and crumbly, about 5-7 minutes.
Once the meat is cooked, toss in the chopped onion and bell peppers. Sauté until softened, about 3-4 minutes.
Add minced garlic to the skillet and cook for another minute until fragrant.
