  • 1 lb beef sirloin, thinly sliced
  • 1 cup bell peppers (mixed colors)
  • 2 cups broccoli florets
  • 1 cup carrots, thinly sliced
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Slice the beef sirloin into thin strips. Chop bell peppers and carrots into bite-sized pieces. Ensure broccoli florets are small enough for one bite.
  2. In a bowl, whisk together the soy sauce, sesame oil, minced garlic, and cornstarch mixture. Set aside.
  3. Use a large skillet or wok over medium-high heat. Add a splash of vegetable oil until it shimmers.
  4. Add sliced beef to the hot pan in batches if necessary. Cook for about 3-5 minutes until browned on all sides. Remove from heat and set aside.
  5. In the same pan, add bell peppers, broccoli, and carrots. Stir-fry for about 3-4 minutes until they’re tender-crisp.
  6. Return cooked beef to the pan with vegetables and pour over the prepared sauce. Stir well and cook for another minute until heated through.
  7. Transfer to plates, drizzle with additional sesame oil if desired, and enjoy!
