  • 34 boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 1 can (4 oz) mild or hot canned green chiles, drained
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • Salt and pepper to taste
  • 4 cups water

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper, placing them in a single layer in the baking dish.
  3. In a bowl, mix uncooked rice, green chiles, cream of chicken soup, garlic powder, onion powder, and half of the shredded cheese until well combined.
  4. Spread the rice mixture over the chicken and pour water evenly on top.
  5. Cover with aluminum foil and bake for 45 minutes. Remove the foil, sprinkle remaining cheese on top, and bake uncovered for an additional 15 minutes until the cheese is bubbly and golden.
