  • 2 cups fresh spinach, chopped
  • 3 garlic cloves, minced
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil (for sautéing)

Instructions

  1. Preheat Your Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté Spinach: In a large skillet over medium heat, add olive oil. Sauté minced garlic until fragrant, then add chopped spinach. Cook until wilted (about 3 minutes) and set aside to cool slightly.
  3. Combine Ingredients: In a large bowl, mix ground meat, sautéed spinach and garlic mixture, breadcrumbs, grated Parmesan cheese, egg, salt, and pepper until well combined.
  4. Shape Meatballs: With clean hands, form small meatballs about the size of golf balls and place them on the prepared baking sheet.
  5. Bake: Bake in the preheated oven for about 20-25 minutes until golden brown and cooked through.
  6. Serve: Transfer meatballs to plates and drizzle with olive oil or serve over pasta with marinara sauce.
