  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 1/2 cup low-sodium soy sauce
  • 4 cloves fresh garlic, minced
  • 1/4 cup brown sugar
  • 1 tbsp fresh ginger, grated
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cups jasmine rice (cooked)

Instructions

  1. Wash and cube the chicken into bite-sized pieces.
  2. In a bowl, combine chicken pieces with soy sauce, minced garlic, brown sugar, and grated ginger. Marinate for about 20 minutes.
  3. Heat oil in a large skillet over medium-high heat. Add marinated chicken pieces and cook until golden brown (about 6 to 8 minutes).
  4. Add chopped bell peppers and pineapple chunks to the skillet with the cooked chicken. Sauté for an additional 5 minutes until softened.
  5. Cook jasmine rice according to package instructions; fluff when done.
  6. Serve the chicken-pineapple mixture over a bed of rice and garnish with fresh cilantro if desired.
