Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 23 chipotle peppers in adobo sauce, chopped (adjust for spice)
  • 8 oz penne or rotini pasta
  • 2 cups chicken broth (low-sodium)
  • 1 cup heavy cream
  • 1.5 cups shredded Monterey Jack and cheddar cheese blend
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Dice the chicken into bite-sized pieces and mince the garlic.
  2. In a large pot over medium heat, add olive oil. Once hot, add diced chicken seasoned with salt and pepper. Cook until golden brown and fully cooked (about 5-7 minutes).
  3. Push the chicken to one side of the pot and sauté minced garlic on the empty side for about one minute until fragrant.
  4. Stir in chopped chipotle peppers with adobo sauce, then add pasta and chicken broth. Bring to a simmer, cover, and cook according to pasta package instructions until al dente.
  5. Reduce heat to low once pasta is cooked through. Pour in heavy cream and gradually stir in shredded cheese until melted and smooth.
  6. Serve garnished with fresh herbs if desired.
