  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, melted
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking dish with parchment paper.
  2. In a large bowl, mix rolled oats, flour, brown sugar, granulated sugar, baking soda, cinnamon, and salt until combined.
  3. In another bowl, melt the unsalted butter; then add the egg and vanilla extract, whisking until blended.
  4. Pour the wet ingredients into the dry mixture and stir until just combined. Gently fold in the raisins.
  5. Spread the mixture evenly in the prepared dish and bake for 25-30 minutes until golden brown. A toothpick inserted should come out clean.
  6. Allow cooling for ten minutes in the pan before transferring to a wire rack to cool completely. Cut into bars and serve.
