1/2 cup unsalted butter, room temperature
1 cup granulated sugar
1/2 cup honey
3 large eggs, room temperature
2 tsp vanilla extract
1 cup milk (or strong brewed coffee)
8 oz cream cheese, softened
1/2 cup powdered sugar
1/4 cup brewed coffee, cooled
Instructions
Preheat your oven to 350°F (175°C). Grease and line two round cake pans with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat the butter and sugar until light and fluffy (about 3 minutes).
Add honey and mix well. Then add eggs one at a time, beating after each addition. Stir in vanilla extract.
Gradually add the dry ingredients alternately with milk (or coffee), starting and ending with dry ingredients. Mix until just combined.
