  • 1 cup fresh or roasted chestnuts, chopped
  • 1/2 cup unsalted butter
  • 1 cup sweet onions, diced
  • 1 cup celery, diced
  • 3 cups cubed bread (preferably stale)
  • 1 cup low-sodium vegetable broth
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh rosemary, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a baking dish by greasing it lightly.
  2. In a large skillet over medium heat, melt the butter. Add the diced onions and celery; sauté until softened, about 5 minutes.
  3. Stir in the chopped chestnuts along with thyme, parsley, and rosemary. Cook for another few minutes until fragrant.
  4. In a large bowl, mix the sautéed mixture with cubed bread until evenly coated in buttery goodness.
  5. Gradually add vegetable broth until the mixture is moist but not soggy. Stir well to combine.
  6. Transfer the mixture to your prepared baking dish. Bake for about 30-35 minutes until golden brown on top. Serve hot.
