  • 1 lb lean ground beef
  • 1 cup finely chopped mushrooms (button or cremini)
  • 1 cup shredded Swiss cheese
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup plain breadcrumbs
  • 2 large eggs, beaten
  • 2 tbsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup ketchup (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a loaf pan.
  2. In a skillet over medium heat, sauté the onions and mushrooms in olive oil until soft, about 5-7 minutes. Add minced garlic and sauté for another minute.
  3. In a large bowl, combine ground beef, sautéed vegetables, breadcrumbs, eggs, Worcestershire sauce, salt, and pepper. Mix until just combined.
  4. Fold in half of the shredded Swiss cheese into the meat mixture.
  5. Shape the mixture into a loaf and place it in the prepared pan. Spread ketchup evenly over the top.
  6. Bake for 45-50 minutes or until fully cooked (internal temperature should reach 160°F).
  7. Let rest for 10 minutes before slicing and serve with your favorite sides.
