  • 24 Cornish hens (plump and fresh)
  • 2 cups stuffing mix
  • 1 cup low-sodium chicken broth
  • 2 tbsp butter (melted)
  • Salt and pepper (to taste)
  • 2 tbsp fresh thyme (chopped)
  • 2 tbsp fresh rosemary (chopped)
  • 4 cloves garlic (minced)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a roasting pan with cooking spray.
  2. In a large bowl, combine the stuffing mix, chopped thyme, chopped rosemary, minced garlic, and enough chicken broth to moisten without making it soggy.
  3. Gently loosen the skin on each Cornish hen's breast using your fingers. Generously fill each hen with the stuffing mixture.
  4. Brush melted butter over each hen. Season liberally with salt and pepper.
  5. Place the stuffed hens in the greased roasting pan. Roast in the preheated oven for about 1 hour or until their internal temperature reaches 165°F (75°C). Baste halfway through for extra juiciness.
