  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 3 large eggs, room temperature
  • 16 oz softened cream cheese
  • 1 cup sour cream
  • 1 cup fresh strawberries, pureed

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of a springform pan.
  2. Beat cream cheese until smooth. Gradually add remaining sugar. Mix in eggs one at a time, then stir in sour cream until fully combined.
  3. Puree fresh strawberries in a blender. Fold half of the cheesecake batter into the strawberry puree.
  4. Pour half of the plain batter into the crust, followed by half of the strawberry-infused batter. Gently swirl with a knife. Repeat with remaining batters.
  5. Bake for 50-60 minutes until edges are set but center jiggles slightly. Cool in the oven for one hour before refrigerating for at least four hours or overnight.
  6. Serve chilled and garnish with sliced strawberries.
