  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz regular or whole wheat spaghetti
  • 1 medium green bell pepper, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (10.5 oz) cream of chicken soup
  • 24 tbsp hot sauce (to taste)
  • 2 tsp Cajun seasoning
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a large baking dish with nonstick cooking spray.
  2. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, add oil and season the chicken breasts with salt and pepper. Cook for 7-8 minutes on each side until fully cooked. Shred the chicken once cooled.
  4. In the same skillet, sauté the onion, green bell pepper, and garlic until softened (about 5 minutes).
  5. In a large bowl, combine shredded chicken, sautéed vegetables, cooked spaghetti, cream of chicken soup, hot sauce, and Cajun seasoning. Mix well.
  6. Pour the mixture into the prepared baking dish and bake for 25-30 minutes until bubbly and golden brown.
