  • 1 cup sushi rice
  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, sliced
  • 4 nori sheets, cut into squares
  • 3 tbsp mayonnaise
  • 2 tbsp sriracha
  • 1 tsp olive oil
  • Toasted sesame seeds for garnish

Instructions

  1. Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions. Let cool slightly.
  2. In a skillet over medium heat, add olive oil and sauté shrimp for 3-4 minutes until pink and opaque. Season with salt and pepper.
  3. Mix mayonnaise and sriracha in a bowl; adjust spice level to taste.
  4. In a round mold or small cup, layer sushi rice at the bottom, followed by shrimp, avocado slices, nori squares, and drizzle with spicy mayo.
  5. Repeat layers until desired height is reached; finish with sushi rice on top.
  6. Carefully remove from molds onto serving plates and garnish with sesame seeds.
