3–4 boneless, skinless chicken breasts
1/2 cup fresh orange juice
Zest of 1 orange
2 tbsp honey
1/4 cup low-sodium soy sauce
3 cloves garlic, minced
1 tsp red pepper flakes
Instructions
In a bowl, whisk together the fresh orange juice, orange zest, honey, soy sauce, minced garlic, and red pepper flakes.
Preheat your oven to 400°F (200°C). Lightly grease a baking dish with nonstick cooking spray.
Place the chicken breasts in a resealable bag or shallow dish. Pour half of the marinade over the chicken. Seal or cover and let it marinate for at least 30 minutes.
Remove the chicken from the marinade (discard any leftover marinade) and place it in the prepared baking dish. Bake for about 25-30 minutes until cooked through and golden brown (internal temperature should reach 165°F).
While the chicken bakes, pour the remaining marinade into a saucepan and bring to a gentle boil over medium heat until slightly thickened (about 5 minutes).
