3–4 boneless, skinless chicken breasts
1 lb baby potatoes (red or yellow)
1/4 cup balsamic vinegar
2 tbsp extra virgin olive oil
4 cloves fresh garlic, minced
1 tsp dried oregano
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper.
Place the chicken breasts in a large bowl or zip-top bag. Pour half of the marinade over them and let marinate for at least 20 minutes.
While the chicken marinates, chop the baby potatoes in half and toss them with the remaining marinade.
On a large sheet pan lined with parchment paper, arrange the marinated chicken breasts and potatoes evenly.
Roast in the preheated oven for about 30-35 minutes until the chicken reaches an internal temperature of at least 165°F (75°C) and the potatoes are fork-tender.
