  • 1/2 cup breadcrumbs

  • 2 cups beef broth
  • 2 lbs Russet potatoes, peeled and chopped
  • 4 tbsp butter
  • 1/4 cup fresh herbs (such as parsley or thyme), chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic powder, salt, and pepper. Mix until just combined.
  3. Shape the mixture into meatballs about 2 inches in diameter and place them on a greased baking sheet.
  4. Bake for about 20 minutes or until browned and cooked through.
  5. In a small saucepan over medium heat, whisk together beef broth and any drippings from baking the meatballs. Simmer until slightly thickened.
  6. Boil the chopped potatoes in salted water until fork-tender (about 15 minutes). Drain and return to the pot.
