  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen raspberries
  • 2 tablespoons sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add in the egg and vanilla extract; mix until well combined.
  4. Gradually add flour mixed with baking powder until you form a soft dough.
  5. In another bowl, mash the raspberries with sugar until you have a chunky sauce.
  6. Scoop out half of your cookie dough onto a floured surface and shape it into a rectangle.
  7. Spoon some raspberry sauce over it and fold it in half. Gently swirl using a spatula without overmixing.
  8. Using an ice cream scoop or tablespoon, drop portions of dough onto the prepared baking sheets, leaving space in between for spreading.
  9. Bake in the preheated oven for about 12-15 minutes or until edges are golden brown. Allow cooling on wire racks before serving.
