Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, pumpkin pie spice, and salt until combined.
  3. In another bowl, beat together brown sugar, granulated sugar, eggs, vanilla extract, and canned pumpkin until smooth.
  4. Gradually add the dry mixture to the wet mixture and stir until just combined.
  5. In a separate bowl, beat softened cream cheese with granulated sugar and vanilla extract until creamy.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto your prepared baking sheet.
  7. Make an indentation in each ball using your thumb or finger and fill with cream cheese filling.
  8. Bake for about 12-15 minutes until edges are lightly golden.
