Peanut Butter Buckeye Balls are no-bake, bite-sized indulgences that combine creamy peanut butter and rich chocolate for a delightful treat perfect for any occasion.

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. In a large mixing bowl, combine creamy peanut butter, softened unsalted butter, powdered sugar, and vanilla extract. Mix until smooth.
  2. Scoop small portions of the mixture and roll them into balls about one inch in diameter. Place on a parchment-lined baking sheet.
  3. Freeze for about 30 minutes to firm up.
  4. Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.
  5. Dip each chilled peanut butter ball into the melted chocolate, allowing excess to drip off. Place back on the parchment-lined sheet, leaving a small circle of peanut butter visible on top.
  6. Chill again until set, about one hour.
