  • 4 oz Andouille sausage, sliced
  • 1 cup bell peppers, diced (mixed colors)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
  • 2 tsp Cajun seasoning

Instructions

  1. Prepare your ingredients by chopping vegetables and rinsing shrimp.
  2. In a large pot over medium heat, add olive oil and brown the chicken thighs and sausage for about 5-7 minutes.
  3. Add onion and bell peppers; sauté until softened (about 5 minutes). Stir in garlic for an additional minute.
  4. Mix in rice until coated with oil; pour in broth and tomatoes. Season with Cajun spices and bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.
  6. Fold in shrimp during the last five minutes of cooking until pink and cooked through.
