  • 2 cups cooked jasmine rice
  • 1/4 cup pure honey
  • 3 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup breadcrumbs
  • 1/2 cup ketchup

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a large baking dish with nonstick cooking spray.
  2. In a mixing bowl, combine ground beef, minced garlic, soy sauce, honey, and breadcrumbs. Mix until well blended and form into one-inch meatballs.
  3. Heat a skillet over medium heat; add oil if needed. Cook meatballs for 5-7 minutes until browned on all sides but not fully cooked.
  4. In another bowl, mix cooked rice with half of the ketchup-honey mixture. Spread this rice evenly in the prepared baking dish.
  5. Place partially cooked meatballs on top of the rice and drizzle with the remaining sauce.
  6. Cover with aluminum foil and bake for about 25 minutes. Remove foil and bake for an additional 10-15 minutes until meatballs are fully cooked.
