  • 1 cup warm water (around 110°F/43°C)
  • 2 tsp dried yeast
  • 2 tbsp olive oil
  • 1 tsp salt

Instructions

  1. 1. Activate the Yeast: In a small bowl, mix warm water and dried yeast. Let sit for 5-10 minutes until frothy.
  2. 2. Mix the Dough: In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center, add the activated yeast mixture and olive oil. Mix until a shaggy dough forms.
  3. 3. Knead: Turn dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
  4. 4. First Rise: Place dough in an oiled bowl, cover with a damp cloth, and let rise in a warm area for about 1 hour or until doubled in size.
  5. 5. Shape the Pitas: Punch down the risen dough and divide it into equal pieces. Roll each piece into balls and then flatten to about 1/4 inch thickness on a floured surface.
  6. 6. Bake: Preheat your oven to its highest setting (around 475°F/245°C). Place a baking stone or inverted baking sheet inside to heat up. Transfer rolled pitas onto parchment paper or directly onto the hot stone/sheet. Bake for 3-5 minutes until puffed.
  7. 7. Serve: Enjoy fresh from the oven with dips like hummus or stuffed with your choice of fillings.
