2 cups all-purpose flour
1/2 cup cold butter (cubed)
1/4 tsp salt
4–6 tbsp ice water
4 large eggs (scrambled)
1 cup shredded cheddar cheese
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, mix flour and salt. Add cold butter cubes, mixing until it resembles coarse crumbs.
Gradually add ice water, stirring until a dough forms. Avoid overworking the dough.
On a floured surface, roll out the dough to about 1/8-inch thick. Cut into rectangles measuring approximately 4×6 inches.
In a skillet over medium heat, scramble the eggs until just set.
Stir in shredded cheddar cheese until melted and combined. Season with salt and pepper.
Spoon filling onto one half of each dough rectangle.
Fold the other half over and crimp edges with a fork to seal.
Place on a parchment-lined baking sheet and brush tops with melted butter if desired.
