  • 1 cup Medjool dates, pitted and chopped
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup boiling water
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar
  • 2 tbsp unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an eight-inch square baking dish.
  2. In a bowl, soak the chopped dates in boiling water for about 10 minutes until softened. Drain and set aside.
  3. In another mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 3 minutes.
  4. Add in the eggs one at a time, mixing well after each addition.
  5. Whisk together the flour and baking powder in a separate bowl. Gradually fold this into the butter-sugar mixture until just combined. Gently fold in the soaked dates.
  6. Pour the batter into the prepared dish and spread evenly. Bake for approximately 35 minutes or until golden brown and set in the middle.
  7. In a saucepan over medium heat, combine heavy cream, brown sugar, and butter. Stir continuously until thickened, about 5 minutes.
  8. Once baked, let the pudding cool slightly before drizzling generously with warm toffee sauce. Serve while still warm.
