3–4 medium Granny Smith apples (peeled, cored, and chopped)
1/4 cup brown sugar
1 tsp cinnamon
1 cup rolled oats (old-fashioned)
1 cup all-purpose flour
1/2 cup brown sugar
1 tsp cinnamon
1/2 cup unsalted butter (softened)
1 tsp vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
In a bowl, mix the chopped apples with brown sugar and cinnamon until evenly coated. Set aside.
In another bowl, combine rolled oats, flour, brown sugar, and cinnamon.
Cut in softened butter until the mixture resembles coarse crumbs.
Spread half of the streusel mixture into the prepared baking dish as a base layer.
Layer the spiced apple filling on top.
Sprinkle the remaining streusel over the apples evenly.
Bake in the preheated oven for about 30-35 minutes until golden brown and bubbly.
