  • 8 pieces tempura shrimp (store-bought or homemade)
  • 1 ripe avocado, sliced
  • 1 ripe mango, sliced
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sriracha (adjust to taste)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions, usually at a 1:1 water ratio. Let cool slightly and season with rice vinegar, sugar, and salt.
  2. Prepare tempura shrimp by frying until golden brown if using raw shrimp; otherwise, heat pre-made shrimp as per instructions.
  3. Slice the avocado and mango into thin strips.
  4. On a bamboo mat, place a sheet of nori and spread an even layer of sushi rice, leaving an inch at the top edge. Add tempura shrimp, avocado, and mango at the bottom edge.
  5. Roll tightly using the bamboo mat while applying gentle pressure and seal with water.
  6. Cut into bite-sized pieces with a wet knife. Serve with soy sauce mixed with sriracha.
