  • 4 cups fresh spinach, washed and dried
  • 2 cups mushrooms, sliced (button or cremini)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • 1/2 cup freshly grated Parmesan cheese (optional)

Instructions

  1. Wash the spinach thoroughly under cold water. Dry it using a salad spinner or by patting it gently with paper towels. Slice the mushrooms and mince the garlic.
  2. In a large skillet over medium heat, melt the butter. Add the sliced mushrooms and cook until golden brown and tender, about 5 minutes.
  3. Once the mushrooms are cooked, add the minced garlic. Stir continuously for about 1 minute until fragrant.
  4. Add the fresh spinach to the skillet, stirring it into the mushroom mixture until wilted—this should take about 2 minutes.
  5. Pour in the heavy cream and stir well to combine all ingredients. Allow it to simmer on low heat for about 5 minutes until slightly thickened. Season with salt and pepper.
  6. Remove from heat and sprinkle with freshly grated Parmesan cheese if desired. Serve warm on plates or directly from the skillet.
