4 cups fresh spinach, washed and dried
2 cups mushrooms, sliced (button or cremini)
1 cup heavy cream
3 cloves garlic, minced
2 tablespoons butter
Salt and pepper, to taste
1/2 cup freshly grated Parmesan cheese (optional)
Instructions
Wash the spinach thoroughly under cold water. Dry it using a salad spinner or by patting it gently with paper towels. Slice the mushrooms and mince the garlic.
In a large skillet over medium heat, melt the butter. Add the sliced mushrooms and cook until golden brown and tender, about 5 minutes.
Once the mushrooms are cooked, add the minced garlic. Stir continuously for about 1 minute until fragrant.
Add the fresh spinach to the skillet, stirring it into the mushroom mixture until wilted—this should take about 2 minutes.
Pour in the heavy cream and stir well to combine all ingredients. Allow it to simmer on low heat for about 5 minutes until slightly thickened. Season with salt and pepper.
Remove from heat and sprinkle with freshly grated Parmesan cheese if desired. Serve warm on plates or directly from the skillet.
