  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 2 tsp dried oregano
  • 1/3 cup extra virgin olive oil
  • 2 cups mixed bell peppers (sliced: red, yellow, green)
  • 2 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray or olive oil.
  2. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. Add chicken breasts to the marinade; coat well and marinate for at least 30 minutes.
  4. While marinating, slice bell peppers and lay them in the baking dish.
  5. Place marinated chicken on top of the peppers and drizzle with honey.
  6. Bake uncovered for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C).
  7. Serve warm with pan sauce drizzled on top.
