Irresistible Curried Veggie Lattice Pot Pie is a vibrant and comforting dish that elevates humble vegetables into a delightful meal perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, chilled and diced
  • 1/4 tsp salt
  • 6 to 8 tbsp ice water
  • 2 cups mixed vegetables (carrots, peas, potatoes, bell peppers)
  • 1 cup coconut milk
  • 2 tbsp curry powder
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix flour and salt.
  2. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in ice water, one tablespoon at a time, until dough forms.
  4. Divide dough in half; shape into discs and refrigerate for at least 30 minutes.
  5. Preheat oven to 400°F (200°C).
  6. In a skillet over medium heat, add olive oil and sauté garlic and ginger until fragrant (about 1 minute).
  7. Add mixed vegetables and cook until tender-crisp (about 5 minutes).
  8. Stir in coconut milk, curry powder, salt, and pepper; simmer for about 5 minutes until slightly thickened.
  9. Roll out one disc of dough on a floured surface; place it in a pie dish.
  10. Pour veggie filling into the crust.
  11. Roll out the second disc and cut into strips for lattice topping; arrange over filling.
  12. Bake for 30–35 minutes or until crust is golden brown.
