1 cup unsalted butter, chilled and diced
1/4 tsp salt
6 to 8 tbsp ice water
2 cups mixed vegetables (carrots, peas, potatoes, bell peppers)
1 cup coconut milk
2 tbsp curry powder
3 cloves garlic, minced
1-inch piece ginger, minced

Instructions
In a large bowl, mix flour and salt.
Cut in the butter until the mixture resembles coarse crumbs.
Stir in ice water, one tablespoon at a time, until dough forms.
Divide dough in half; shape into discs and refrigerate for at least 30 minutes.
Preheat oven to 400°F (200°C).
In a skillet over medium heat, add olive oil and sauté garlic and ginger until fragrant (about 1 minute).
Add mixed vegetables and cook until tender-crisp (about 5 minutes).
Stir in coconut milk, curry powder, salt, and pepper; simmer for about 5 minutes until slightly thickened.
Roll out one disc of dough on a floured surface; place it in a pie dish.
Pour veggie filling into the crust.
Roll out the second disc and cut into strips for lattice topping; arrange over filling.
Bake for 30–35 minutes or until crust is golden brown.
