  • 34 boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cloves fresh garlic, minced
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Mince the garlic and set aside.
  2. In a large skillet over medium heat, add a splash of oil. Sauté chicken breasts until golden brown on both sides, about 5-7 minutes per side. Remove from skillet and let rest.
  3. In the same skillet, add minced garlic and cook for about one minute until fragrant. Add cream cheese and chicken broth, stirring until smooth.
  4. Cook penne according to package instructions until al dente. Drain well and add to the skillet with the creamy sauce along with the cooked chicken pieces.
  5. Sprinkle in Italian seasoning along with salt and pepper to taste. Stir well to combine.
  6. Top with shredded cheese right before serving and let it melt beautifully before plating.
