Instructions

  1. Preheat Your Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly grease them.
  2. Mix Dry Ingredients: In a medium bowl, whisk together all-purpose flour, cocoa powder, baking powder, and a pinch of salt until well combined.
  3. Combine Sugars and Oil: In a large bowl, beat granulated sugar, brown sugar, and vegetable oil until light and fluffy for about three minutes. Add in eggs one at a time along with vanilla extract.
  4. Combine Wet and Dry Ingredients: Gradually incorporate the dry mixture into the wet ingredients until just combined; be careful not to overmix.
  5. Chill Cookie Dough: Cover the dough and chill it in the refrigerator for about 30 minutes to ensure thicker cookies when baked.
  6. Roll & Bake: Scoop tablespoons of chilled dough, roll them into balls, and coat each ball in powdered sugar before placing them on prepared baking sheets about two inches apart. Bake for about 10 to 12 minutes until slightly firm on edges but soft in center.
