This comforting Chicken Zucchini Casserole features tender chicken and fresh zucchini enveloped in a creamy sauce, making it an ideal dish for weeknight meals or family gatherings.
Preheat your oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
In a large skillet over medium heat, add olive oil. Sauté chopped onions and minced garlic until fragrant (about 2 minutes). Add diced zucchini and cook until slightly softened (about 5 minutes). Season with salt and pepper.
Season chicken breasts with salt and pepper on both sides.
Layer the sautéed zucchini mixture in the bottom of the prepared baking dish. Place seasoned chicken breasts on top and pour cream of mushroom soup over everything.
Sprinkle shredded mozzarella and cheddar cheeses over the casserole. Finally, scatter panko breadcrumbs on top.
Bake in the preheated oven for about 30–35 minutes or until the chicken reaches an internal temperature of at least 165°F (74°C) and breadcrumbs are golden brown.
