  • 4 cups fresh spinach
  • 8 oz button or cremini mushrooms, sliced
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper on both sides and place them in the baking dish.
  3. In a skillet over medium heat, add olive oil. Sauté the chopped onion and minced garlic until fragrant (about 3-4 minutes). Add sliced mushrooms and cook until tender.
