  • 4 slices whole grain bread
  • 1 cup fresh spinach leaves
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice

Instructions

  1. Preheat your skillet or grill to medium heat. Season chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F (75°C). Let rest before slicing thinly.
  2. In a small bowl, mix mayonnaise and lemon juice until smooth.
