  • 1 cup canned pumpkin puree
  • 1 cup ricotta cheese (whole milk)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Cook pasta according to package instructions; drain and set aside.
  2. In a large bowl, mix pumpkin puree, ricotta cheese, garlic, oregano, thyme, salt, and pepper until smooth.
  3. Combine cooked pasta with the pumpkin mixture until evenly coated.
  4. In a greased baking dish, layer half of the pasta mixture and sprinkle half of the mozzarella cheese on top. Repeat with remaining ingredients.
  5. Top with remaining mozzarella and Parmesan cheese.
