  • 4 salmon fillets (6 oz each)
  • 2 ripe peaches, halved and pitted
  • 1/2 cup bourbon
  • 1/4 cup brown sugar
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat (400°F/200°C) and lightly oil the grill grates.
  2. In a bowl, whisk together bourbon, brown sugar, lemon juice, Dijon mustard, salt, and pepper until combined.
  3. Marinate salmon fillets in half of the mixture for at least 20 minutes.
  4. Brush cut sides of peaches with olive oil and sprinkle with salt.
  5. Grill salmon skin-side down and peaches cut-side down for 4-5 minutes per side until salmon flakes easily and peaches are caramelized.
  6. Drizzle remaining marinade over grilled items before serving warm.
