  • 4 large bell peppers (red or yellow)
  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 8 oz fresh mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup full-fat sour cream
  • 1 cup low-sodium beef broth
  • 2 tbsp Dijon mustard

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a large baking dish with nonstick cooking spray.
  2. Cut off the tops of the bell peppers and remove seeds. Rinse under cold water and set aside.
  3. In a large skillet over medium heat, sauté chopped onions until translucent.
  4. Add ground beef and cook until browned. Stir in minced garlic and sliced mushrooms; cook until mushrooms soften.
  5. Pour in beef broth while stirring in Dijon mustard. Let it simmer gently. Reduce heat and mix in sour cream until everything is well combined and creamy.
  6. Spoon the beef stroganoff mixture into each prepared pepper. Place them upright in your baking dish.
  7. Cover with foil and bake for about 30 minutes until peppers are tender but still holding their shape. Remove foil during the last five minutes for browning if desired.
  8. Transfer to plates and drizzle with sauce for an exquisite finishing touch.
