  • 1 egg, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tbsp sriracha (adjust for spice level)
  • 8 small flour or corn tortillas
  • 2 cups shredded cabbage (green or purple)
  • Lime wedges for garnish

Instructions

  1. Pat shrimp dry with paper towels and season lightly with salt and pepper.
  2. Set up a breading station: In one bowl, combine flour with a pinch of salt. In another bowl, place the beaten egg. In a third bowl, add panko breadcrumbs.
  3. Dredge each shrimp in flour, dip into the egg mixture, then coat thoroughly in panko breadcrumbs.
  4. Preheat air fryer to 400°F (200°C).
  5. Place breaded shrimp in a single layer in the air fryer basket. Cook for about 8-10 minutes until golden brown and crispy.
  6. Warm tortillas in a pan or microwave.
  7. Fill each tortilla with shredded cabbage, top with crispy shrimp, drizzle generously with bang bang sauce, and serve with lime wedges.
