  • 3 lbs Russet potatoes, peeled and cubed
  • 1 cup sour cream (full-fat recommended)
  • 1 ½ cups sharp cheddar cheese, grated
  • 1 cup bacon bits (cooked)
  • 4 green onions, chopped (white and green parts)
  • 2 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a large baking dish with nonstick cooking spray.
  2. Boil the peeled and cubed potatoes in salted water until tender, about 15-20 minutes. Drain.
  3. In the pot, mash the potatoes with sour cream, garlic powder, salt, pepper, half of the cheddar cheese, and half of the bacon bits until creamy.
  4. Spread the mashed potato mixture into the prepared baking dish. Top with remaining cheese and bacon bits.
  5. Bake for 25-30 minutes or until bubbly and golden brown on top. Garnish with chopped green onions before serving.
