Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • 8 oz dark chocolate, chopped
  • 1 cup heavy cream
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, cocoa powder, sugar, and a pinch of salt.
  3. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Add the egg and mix until fully combined.
  5. Press the dough into an even layer in a tart pan. Prick with a fork to prevent bubbling.
  6. Bake for about 20 minutes or until firm. Let it cool completely.
  7. While the crust cools, heat heavy cream in a saucepan until just simmering.
  8. Remove from heat and add chopped dark chocolate. Stir until melted and smooth.
  9. Pour the ganache into the cooled tart shell and spread evenly.
  10. Top generously with fresh raspberries arranged artfully.
  11. Refrigerate for at least two hours or until set.
  12. Slice into wedges and serve chilled or at room temperature.
